Before I attended baking classes, I used to use liquid colouring. But I quickly learnt that these gel icing colours work better because they don't affect the proportions of the fondant or cookie batter which could affect texture and taste.
These icing colours are great for:
1. Colouring Fondant
I normally use a toothpick to lift a little of the icing and rub it into the fondant. Add more as necessary.
2. Making Icing Paint
Add a dash of lemon extract or alcohol to the icing colour and then paint directly on the fondant. Check out this tutorial which has great tips on how to paint on fondant.

* A final tip : If you are intending to colour anything red or black, you will need a lot more gel than normal so make sure you get an extra jar so you don't have to head back for it.
